Proud2Cook Sautéed Greens with Caramelized Onions and Raisins

By Birdie--Sweet and savory, an under-appreciated pairing. While it may seem weird to cook raisins with your greens, trust me—it’s a match that won’t disappoint! This simple and quick recipe is also versatile because you can use any kind of greens you like. Try it as written with kale, or swap the kale out for collards, chard or something else entirely. Go wild!

Ingredients

  • Olive oil, coconut oil or butter
  • 1 bunch kale, spinach, swiss chard or your favorite green (try something new!)
  • 1 small sweet onion
  • 1 large handful of raisins
  • Salt & pepper
     

Method

1. Thinly slice onions. Heat oil (enough to thinly coat the bottom of the pan) in a large sauté pan over low to medium heat. Add onions and let cook. Stir occasionally until onions brown.

2. While the onions are cooking, rinse the kale under cold water. Remove the ribs and rip the greens into medium sized pieces. If you are using other greens, wash and cut the greens.

3. When the onions have turned dark yellow, add the greens and raisins to the pan. Turn the heat up to medium. Stir everything while the greens cook. Your goal here is to get the raw greens on top to the bottom without pieces popping out. It's a tough job, but you can do it!

4. Continue stirring until the greens have wilted to your liking. Add salt and pepper to taste.  Enjoy!
