Proud2Cook Pumpkin Pancakes & Waffles

As served at Pixar's Luxo Cafe, with minor tweaks by Recovery Dad, and based originally on the Fanny Farmer Cookbook recipe.

  • 5 ounces flour, (1 cup)
  • 2 tablespoons sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/8 teaspoon allspice
  • 2 1/2 ounces pumpkin puree
  • 2 tablespoons butter, melted
  • 1 large egg


1. Whisk the flour, sugar, salt, baking soda, and allspice in a medium bowl. Set aside.

2. Beat the buttermilk, pumpkin puree, butter and egg lightly in a mixing bowl. Add the dry ingredients all at once, stirring just enough to moisten the flour. Be careful not to overwork the batter.

3. Lightly butter or grease a griddle or frying pan and set over moderate heat until a few drops of cold water sprinkled on the pan form skittering globules.  If using an electric griddle set it at 375º F.

4. Pour about 1/4 cup per pancake on the griddle; bake until the cakes are very bubbly on top and the undersides are lightly browned, about 4 minutes. Turn with a spatula and brown the other side.  Serve at once if possible. If holding, place finished cakes on a heated plate in a very slow (200º F) oven until ready to serve.
